Tomatillo Braised Drumsticks - Bringing back a classic!

Those of you who have followed us for a while may have seen this recipe posted years ago. When we switched our website and online store to a new platform we did not carry over all of our previous recipes. Since this is one of my favorites, and its literally SO easy, I had to bring it back to share with everyone who has been here forever or for those just arriving. This one will not disappoint! It's also very malleable so you can switch and swap things out to fit your tastes. I have made several variations of this recipe by using Italian inspired herbs/spices and serving it over pasta, or by using Chinese 5 spice and making a rice bowl topped with sesame seed furikake. All around scrumptious in every form!

Tomatillo Braised Drumsticks (recipe adapted from Tyler Cook)

  • 8 drumsticks
  • ½ lb tomatillos 
  • 8 cloves of garlic, smashed
  • 1 yellow onion, chopped
  • 1 large tomato, chopped
  • 1 red bell pepper, chopped
  • 2 dried chipotle peppers
  • 1 tablespoon coriander
  • 1 tablespoon cumin
  • 1 lime
  • 2 tablespoon oil of choice (I prefer coconut, avocado or olive)
  • 1 bunch of cilantro (depending on your tastes)
  1. Brown onion and garlic in olive oil. Add red pepper and tomatillo, stir over high heat until they begin to caramelize.
  2. Add remaining ingredients and cover with a tight lid. Cook over low heat until drumsticks are beginning to fall from bone, about 90 minutes. 
  3. Remove drumsticks from the pot, use a whisk or wooden spoon to mash remaining ingredients into a rough puree.  
  4. Pull chicken from bone, use in tacos or tamales, top with puree. Enjoy!
