A butternut and buttercup cross, honeynuts are small squashes with a thin skin and very sweet flavor. You can eat the whole thing, just like delicata, and the flavor is exceptional when roasted. Enjoy this special treat!

Cut squash in half horizontally. (Save seeds for roasting.) Roast at 375°F, face down, for 45 minutes. Flip over, drizzle olive oil on flesh and continue roasting until soft.
